INGREDIENTS:
1 cup Dried Elderberries
1 tablespoon Ground Ginger Root OR 1-inch nub fresh ginger coarsely chopped
1 tablespoon Ground Cinnamon OR 3 Cinnamon sticks
1 tablespoon Ground Cloves OR Whole Cloves
Peel of 1 or 2 oranges or tangerines (cleaned and optional)
4 cups Water
1 cup Honey (raw, local honey preferred) or Agave
DIRECTIONS:
1. Place 1 cup of dried elderberries and 4 cups of water in a saucepan with a lid. Stir in ginger, cinnamon, cloves, and orange or tangerine peels
2. Bring to a boil. Reduce to a simmer, partially covered. Stirring occasionally, simmer until the liquid is reduced by half. About 45 to 60 minutes.
3. Remove from heat, let cool, and pour through a strainer (discarding berries and cloves).
4. Stir in a cup of honey or agave syrup.
5. Pour into a jar or bottle with a lid and store in the refrigerator for up to two weeks.
